Embarrassingly Easy Italian Grilled Chicken

I love....love...three day weekends. And Memorial Day weekend is one of the best. Sunshine, family get- togethers, the first of the season's fresh produce, and of course, lots and lots of grilled food. Don't get me wrong, other holidays are great. I love the playfulness of Halloween, the color and warmth of Thanksgiving, and the cheery hustle and bustle of Christmas. But Memorial Day is different. It's low key. It's stress free. You can pull off a perfect Memorial day gathering with next to no planning. Which brings me to this recipe.



Even if you forgot you invited your entire family, church, book club, and street over for a big feast tomorrow, you have no reason to worry. I've got you covered. This recipe is exactly what it says it is. Embarrassingly Easy. Oh, and also Unbelievably Delicious. 

So here's the deal. You buy some chicken. You pour a whole bottle of Italian salad dressing over it. You let the chicken take a nice little bath in the dressing all night long. The next day you slap it on the grill and smile humbly as the crowd oohhhs and ahhhs over your mad grilling skills.


So go grab some chicken, a bottle of dressing, salad fixings, and a watermelon and your Memorial Day feast is ready to go. After all, who wants to spend their day off slaving away in the kitchen? Not this girl. Nope, I'm going to be spending the day relaxing outside, chilling with my fam, playing some corn hole and, enjoying some fantastic grilled chicken.  How about you? P.S. Please, please, please grill up a few more chicken breasts than you'll need for your awesome party. They make great leftovers for a chicken sandwich, on top of a salad, or my personal favorite, cranberry and pistachio chicken salad! Stay tuned for the recipe!

Embarrassingly Easy Italian Grilled Chicken
Yield: Serves 8

Ingredients:
4 large chicken breasts
1 bottle Italian Dressing (I used Wishbone because it specifically states that it's gluten free)

Directions:
1. Butterfly chicken breasts to make 8 thinish chicken pieces.
2. Place all 8 pieces in a 13 x 9 in pan. Poke holes throughout the chicken. Pour salad dressing over all. Cover and refrigerate 4-8 hours or overnight.
3. When ready to eat, prepare grill and place chicken breasts on grill. Grill until just slightly charred on both sides and no pink remains.
