Challah French Toast with Carmelized Bananas

The other day I had one of those moments. One of those AHA moments when everything seems to come together. I was pondering what I would use our leftover Challah rolls for, when I suddenly remembered one of our favorite dishes at a local restaurant...Challah French Toast with Caramelized Bananas.

I ran to the cupboard...there sat a brand new bottle of pure maple syrup just purchased from the farm market. I ran to the fridge...a gallon of milk, a carton of eggs, and four sticks of butter were chilling together on the shelf.

I crossed my fingers as I gazed over at the counter...there sat two innocent barely spotted bananas.


And on the top cabinet shelf...a bottle of bourbon.


It was a sign. God was clearly telling me to make French toast. And when God tells you something, you don't mess around.


I can't say much more than what the pictures already tell you. God has the best ideas. You should really listen to them. 

Challah French Toast with Caramelized Bananas
Yield: 2-4 servings (Depends on if this is the main course or served with other things)

For the French Toast:
2 Challah rolls, halved
3 eggs
Splash milk
1 tsp. vanilla
1 tsp. cinnamon

Directions:
1. In a wide, shallow bowl whisk together eggs, milk, vanilla, and cinnamon. 
2. Dip cut side of roll into egg mixture then place on skillet over medium high heat. Grill until golden brown. Flip and grill lightly on uncut side. Serve with maple syrup, whipped cream, and caramelized bananas.

For the Caramelized Bananas:
2 bananas
Scant 1/4 cup brown sugar
1 Tablespoon butter
1 teaspoon bourbon

1. Cut bananas into about 1/4 in slices. 
2. Melt butter in a skillet over medium heat. Place banana slices in skillet in single layer. Cover with brown sugar. 
3. Brown bananas on one side, then flip, allowing sugar to cook and the other side to brown.
4. Remove from heat then pour in bourbon. Let sizzle for a minute, then use the bourbon to slide banana slices out of skillet and onto a plate. 
5. Serve with Challah French Toast or ice cream or oatmeal or pudding or anything you want to be super delicious.
