Crazy Cake with Caramel Frosting

This cake is a tradition in my family. It's my dad's favorite and my mom's specialty. The recipe does not include any eggs (hence the name Crazy Cake), but trust me, you will not miss them. This cake is rich, incredibly quick and simple to make, and oh -so- moist.

I've tried this cake with buttercream and cream cheese frosting, both of which were delicious. But in my family, it's not truly Crazy Cake unless it's covered in caramel frosting and served warm in a bowl with milk. It's tradition.


Crazy Cake

Makes one 9x13 cake or two 8 in round cakes

Ingredients:
6 Tablespoons cocoa
2 cups sugar
3 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
 2 cups water
1 cup oil
2 Tablespoons vinegar
2 teaspoons vanilla

Directions:
1. Preheat oven to 350 degrees. Grease one 9 x 13 pan.
2.  In a large bowl, whisk together first five ingredients.
3. Make nest in the center then pour wet ingredients into the center (see picture above).
4. Mix ingredients together until smooth. Don't beat. Pour into greased pan.
5. Bake at 350 degrees for 30 minutes.

Caramel Frosting

Frosts one 9 x13 cake


Ingredients:
5 Tablespoons brown sugar
4 Tablespoons butter
4 Tablespoons cream
1-1 1/2 cups powdered sugar

Directions:
1. In small sauce pan, melt butter.
2. Add brown sugar and boil until it has browned.
3. Add cream and bring back to a boil.
4. Remove from heat and whisk in powdered sugar, about a 1/2 cup at a time, until you reach desired consistency. Spread frosting on cake while still hot.
